Cathy LoweWhat recipes can you make with leftover ham?
I usually dice the leftover ham and freeze it until I think of something. Omelets, add to Velveeta shells and cheese, or this...
1 pkg. Knorr/Lipton broccoli cheese rice
1/2 pkg. frozen broccoli thawed and squeezed
1 can cream of chicken soup
2 big handfuls Tillamook extra sharp cheddar
2 big handfuls diced ham
Splashes of milk and half and half
1/2 pkg. dry Stove Top tossed with 4 Tbsp melted butter
Garlic powder
Make the rice dish. When it's done stir in the soup, broccoli, ham, cheddar,
some milk and half and half and some garlic powder. Put it all in a greased
souffle dish, top with the stuffing, and bake at 350F for about 45 minutes.

1 1/2 cups scalded milk

Grease a 2 qt. covered casserole dish. Parboil potato slices over medium heat in unsalted water for 5 minutes. Strain and replace water with cold water to stop cooking process.
In a small bowl, blend together flour, parsley, chives salt and pepper. Strain potatoes.
In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer. Dot each layer with some butter, reserving enough potatoes and butter for the top layer.
Sprinkle top with paprika and parsley.
Cover casserole and bake in 375掳F oven for 45 minutes covered, then 15 minutes uncovered.
Serves 4-6
Curried!! For a spicy twist add 陆 teaspoon curry to dry ingredients and omit the chives and paprika!

SPLIT PEA AND HAM SOUP
1 ham bone
1 lb. dry split peas
4 cloves garlic, minced
1 tablepsoon each butter and olive oil
2 quarts water
2 bay leaves
1 lb baby carrots
1 lb spaghetti, broken into 3'; pieces
salt and pepper, to taste
1 can evaporated milk or 1 cup light cream or milk
Empty package of split peas into a colander or bowl. Sort through well, removing foreign matter and imperfect peas. Rinse well. Soak for two hours in 2 cups water.
In a large soup pot or Dutch oven, saut茅 minced garlic in 1 tablespoon of butter and 1 tablespoon olive oil until garlic golden, but not brown in color. Add ham bone, water in which peas have been soaked and 2 extra quarts of water, and bay leaves.
Bring to a boil for 1 minute; reduce heat and simmer, covered for 1 hour. Remove cover and simmer an additional hour or until soup is desired consistency. Add baby carrots during final 20-30 minutes of cooking (may be roughly chopped, if desired, or leave whole).
If you prefer a pureed soup, process using a hand blender before adding carrots.
Taste soup one half hour before serving; add additional garlic or garlic powder and salt and pepper, as desired. Bring a separate pot of water to a boil and cook spaghetti according to package directions. Drain.
Stir in milk or cream 10 minutes before serving. If you have any leftover ham, add at this time. Stir in spaghetti. Remove bay leaves before serving.
Note: Kids like to use the leftover soup the following day for an after-school snack by adding hot dogs sliced into 1 inch coins boiled briefly in a saucepan and stirred in. The soup thickens up overnight in the refrigerator, so stir in more milk or a pat of butter before serving.

Scalloped potatoes! Slice potatoes really thin, boil them a bit to soften them up, make a creamy cheese sauce with the cheese you have on hand, stir in the ham...mix some melted butter with parmesan cheese and bread crumbs and sprinkle on top...cover with foil and bake slowly until all heated through. Take foil off at the end to toast up the crunchy topping. Very good! My grandma also used to make ham salad...sam concept as chicken except with ham. Pulse your ham in the food processor to grind it....I never liked this, but she did!
you can add it to eggs, soup, or grilled cheese. You can cook scalloped potatoes and ham, Cheddar ham and potato soup, sandwiches, salads,as a pizza topping, a quiche, or stirred into mac and cheese.
add to; baked beans, macaroni and cheese, cold pastasalad, scalloped potatoes, scrambled eggs, bean soup,

Canless honey ham recipe?
its farmer johns canless honey ham (cooked) and I want to get a recipe for it? No cloves! any subsitute for it or recipes without it?Canless honey ham recipe?
Although I'm not familiar with the brand name, you can certainly leave cloves out of the picture entirely. If you have a glaze you like, use it. Or try this one for a slightly spiced ham.
Glaze:
1/4 teaspoon ground cinnamon
2 tablespoons brown mustard
1/2 cup packed brown sugar
Sauce:
1/4 cup packed brown sugar
2 tablespoons apple cider vinegar
1 cup peach nectar
1 cup peach preserves
5 cups frozen peach slices
2 teaspoons minced fresh ginger root
1 hot cherry pepper, seeded and minced
1 (3 inch) cinnamon stick
While your ham is baking, mix together the cinnamon, mustard and 1/2 cup of brown sugar in a cup or small bowl. Set aside.
In a saucepan over medium heat, mix together the remaining brown sugar, cider vinegar, peach nectar and peach preserves. Bring to a boil and then stir in the sliced peaches, ginger, cherry pepper and the cinnamon stick. Simmer until the peaches are tender and the sauce has thickened, 25 to 30 minutes.
About 30 minutes before your ham is done, remove from the oven and brush heavily with the glaze. Put back in your oven (350 F now, even if you baked it at 325 F), uncovered. Bake 20-25 minutes, until the glaze is bubbly.
Remove from oven and let meat rest 15 or 20 minutes before carving. Serve with the sauce.Canless honey ham recipe?
1 small ham (approximately 2 lbs.)
3 dried ancho chilies
1/4 cup honey
4 cups pre-made pancake batter
1 tsp. fresh rosemary
1 tsp. basil
1 tsp. thyme
1 tsp. chives
1/4 cup balsamic vinegar
1 tsp. sugar
1/4 cup maple syrup
Soak ancho chilies in warm water until soft. Remove from water, chop finely and place in a mixing bowl with 1/4 cup honey. Stir and let sit.
Remove ham from package or can. Score a diagonal pattern 1/4-inch deep with a knife and dust ham with salt and pepper. Bake in a 350-degree oven for 10 to 15 minutes.
Stir fresh herbs into your favorite pancake batter and refrigerate until needed. Combine balsamic vinegar and sugar in a saucepan and simmer until it reduces by one-third. Remove from heat, let cool slightly and add maple syrup.
Remove ham from oven, coat with ancho-honey glaze and return it to the oven. Make pancakes, slice the ham and serve everything with the syrup mixture.oil

I am trying to find good old recipes for raised pies i.e. pork, game, chicken and ham. Can you help please?
I don't know about old recipes, but try this:
Melt 1/3 cup butter or margarine in a large sauce pan. Saute 1/2 cup to 1 cup of chopped onion until tender. Add 1/3 cup flour and stir into a paste. Do all this over a medium-low heat.
Add 1 can of broth (chicken, beef, vegetable) and 2 cups water. Stir until the mixture is rich and bubbly. Add salt and pepper to taste. Add 1 teaspoon (or more for your taste) or Worchestershire sauce.
Stir in one bag of frozen peas %26amp; carrots (or your vegetables of choice). Continue cooking until veggies are warm. Add 2-3 cups of meat, chopped or cubed. Remove pan from heat. Prepare your pie crust ... any crust that uses flour, water, shortening and salt is fine.
Line the pie pan with bottom crust. Fill with the meat and vegetable mixture ... if you have extra, it can be frozen. Top with the second crust and poke several holes in the top for venting. Bake in a preheated 375 degree oven for about 30 minutes, or until the top crust is a nice golden brown.
This is a basic recipe that can be adapted to almost anything with a little tweaking to the ingredients used.I am trying to find good old recipes for raised pies i.e. pork, game, chicken and ham. Can you help please?

Raised Pies are made from Hot water crust pastry.
The pastry should be mixed quickly, and warm, so it is easy to ';raise'; into the shape of a pie. If it is too hot it will be soft and floppy, if too cold it will be difficult to raise without braking.
Sift 1lb flour into a bowl with a pinch of salt.
Heat 5 oz lard, or a mixture of butter and suet in a pan with 1/4 pint water or milk. Bring to the boil. Pour the liquid into the flour and mix quickly, knead it gently in a warm place and let it stand for 1/2 hour to ';recover';.
Roll it out on a lightly floured pastry board, and ';raise it into a pie shape.
There are 3 main methods of ';raising'; a pie.
The easiest is to line the inside of a well greased loose bottomed cake tin, or special raised pie tin. Divide the pastry into two equal sized pieces, then half one of these pieces.
Roll out one of the small pieces to slightly bigger than the bottom of the tin, and tuck it in.
Roll the large piece into a long thin strip, and line the sides of the tin, and stick up 1/2 inch above the sides of the tin.
Fill your pie with chosen filling, and roll the remaining piece to form a lid.
The second method is to divide the pastry into 1/4 and 3/4. Using the 3/4 piece hollow it out using knuckles and draw the sides up to form a case. Fill and use the remaining piece for a lid.
(This method is best tried with small pies, as it requires some experience)
Method 3 is to mould the pastry around the bottom of a floured jar of suitable size, saving some of the pastry for a lid. Leave it to set before removing the jar.
When filling pies, fill them to the brim with the filling mixture, damp the edges and nip them together, make a hole in the middle of the lid to allow steam to escape, and decorate with pastry trimmings of scrolls or roses etc.
Brush the pie over with egg yolk and pin a paper around it to keep it in shape, if you are not usung a tin.
Bake in a preheated moderate oven for 1-2 hours depending on content and size.
Remove paper, if used, for last half hour of baking, but don't open the oven door until the pie has been in for at least an hour.
Add extra stock through the hole in the lid with the aid of a funnel, but do not remove from baking sheet until the pie is cold.
Some suggestions for traditional fillings are:-
Forcemeat - good quality sausage meat with chicken, veal or rabbit, herbs, shallots and mushrooms or truffles.
Pheasant or Partridge
Hare
Minced lamb
Tongue
Pigeon
Pork
Veal and Ham
Best of luck - making these sort of pies is an art which requires practice, but well worth the effort.

bean soup, omlets, bean salad, chef salad, sandwiches
Ham is not a very healthy meat in the first place, too much fat and cholesterol, but we all love it! Slice some of it up for sandwiches and freeze! Use some in a pot of beans, beans are very healthy for you! It also does very well in scalopped potatoes or augratin potatoes..You can chop some up and add it into any pasta or potato salad..And it is great in potato soup...Enjoy!
I don't know how healthy it is but I make ham salad.
Grind up the ham in the food processor.
Then put in some sweet pickle relish and mayonnaise so it will stick together in kind of a spreading consistency so you can put it on bread.
Not so much mayo that is is runny though.
You can add some spice like garlic powder or parsley if you like. It will keep several days, but not around my house.
Look up bean or lentil soups on Cooking Light.com or try this combo, which I love:
saute 1 cup diced onion and 1 cup diced pepper + 2 minced cloves of garlic in olive oil on med until just turning brown. Add 1 can water + 1 can veg or chicken broth (I prefer low sodium). Add 1/3 cup lentils (brown, rinsed) or split peas + 1 can diced tomatoes (drained) + 1 can Goya black bean SOUP. If you can only find canned black beans, thats fine too, just add some oregano, cumin, etc. Add the ham, diced. Simmer 30 min until lentils are cooked.

bean soup, omlets, bean salad, chef salad, sandwiches

1/2 c. cranberry-orange sauce
2 tbsp. vinegar

HAM AND BROCCOLI WITH HOLLANDAISE
SAUCE
English muffins
Thinly sliced ham
Sliced Swiss cheese
Steamed broccoli
Hollandaise Sauce
Raise rack in oven to groove that is second from the top and turn oven heat to broil.
Cut several English muffins in half and place soft side up and put in the oven long enough to lightly brown. (Not too long, you still want them to be fairly soft.)
At this time you will need to turn the oven down to 350 degrees and low the rack so it rests in the center groove.
After they have browned, place about 3 pieces of thinly sliced ham on each muffin.
Place 1 slice Swiss cheese on each muffin. Place in oven until cheese is melted.
Serve with steamed broccoli as the next layer with Hollandaise Sauce topping it off.
HOLLANDAISE SAUCE: Stir 2 egg yolks, slightly beaten and 3 tablespoons lemon juice vigorously in 1 quart saucepan with a wooden spoon. Add 1/4 cup butter. Heat over very low heat, stirring constantly, until butter is melted. Add 1/4 cup butter, stirring vigorously until butter is melted and sauce thickens. (Be sure butter melts slowly; this gives eggs time to cook and thicken sauce without curdling.) Serve hot or at room temperature. 3/4 cup sauce.
Using a double boiler is a good idea but I just raise a small pan approximately 2'; off burner. When making 6 halves of the ham and Swiss mixture, I double this recipe. This lunch is very filling and will definitely hold you over until dinner.

ZIP'S BAKED HAM
15 oz. crushed pineapple
12 oz. diet (or classic) coke
1/2 lb. dark brown sugar
Whole ham (approximately 10 lb.)
Trim off most of surface fat. Shake 1 tablespoon of flour in browning bag to prevent sticking. If you prefer, wrap in heavy duty foil. It works just as well. The bag makes it easier to clean up! Place ham in bag, place (pour) all ingredients over ham. Seal bag and make 4 to 6 one inch slits in top of bag.
Bake at 275 degrees; 30 minutes for each pound of ham. Remove bones and other fat as soon as meat cools enough to be handled. Wrap meat in foil and place in refrigerator until cool. Slice AFTER cooling.
NOTE: Pineapple, coke, and sugar may be increased or decreased according to taste and size of hamLooking for ham recipe that has brown sugar, honey, pinapples and cheeries with coke?
There are like a million of these online. Just look up ';Coca Cola Ham recipe';. You can even do this in a crock pot. It works best with a canned Hostess or Smithfield ham, which is round and pretty much perfect crockpot shape. Be warned - do not use Diet Coke. This works because the sugars in the cola caramelize. Diet Coke can't do that, and it tastes weird and kinda yucky.
