Any one have a good soup recipe using ham and lots of veggies?

I don't want a chowder or a cream soup. Any one have a good soup recipe using ham and lots of veggies?
I often make split pea soup and chop lots of veggies into it. I chop up carrots, potato or cassava, pepper, celery, onion and garlic.


Spice it up with thyme, oregano, black pepper, and a small dash of balsamic vinegar.


Makes for a good flavorful soup and I get to use up my extra veggies, and ham bone.Any one have a good soup recipe using ham and lots of veggies?
Crock Pot Fresh Vegetable-HamBarley Soup





1/2 pounds ham shank


1 small bell pepper, chopped (1/2 cup)


3/4 cup 1-inch pieces green beans


3/4 cup chopped onion


2/3 cup uncooked barley


2/3 cup fresh whole kernel corn


1 1/2 cups water


1 teaspoon salt


1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves


1/4 teaspoon pepper


3 1/2 cups broth (from 32-ounce carton)


2 cans (14 1/2 ounces each) diced tomatoes with garlic, undrained


1 can (8 ounces) tomato sauce








1. Mix all ingredients in 3 1/2- to 6-quart slow cooker.


2. Cover and cook on low heat setting 8 to 9 hours (or high heat setting 4 to 5 hours) or until vegetables and barley are tender.

Then throw the ham in a broth and begin simmering. Chop your vegetables up and toss the longer cooking ones in first. Add what ever you want seasoning wise and let it cook until the harder vegetables are cooked. really simple and will fill your house with heat and wonderful smell.
Go to your local grocery store and get a package of 15 bean soup. I add my favorite meat and vegetables and OMG it is so good and very easy.
