What recipes can you make with leftover ham?

preferable like slow cooking in the oven.... but all are helpful :)What recipes can you make with leftover ham?
I have an excellent recipe for quiche using ham, if you'd like ( or anyone else for that matter email me) Here is a recipe for ham scalloped potatoes

Ingredients

* 2 tablespoons butter

* 2 tablespoons flour

* 1 1/2 cups milk

* Salt and pepper

* 1 tablespoon butter

* 2 medium onions, thinly sliced

* 4 large russet potatoes, peeled and thinly sliced

* 12 ounces 1/4 inch sliced baked ham

* 2 cups grated cheddar cheese

Directions

Preheat oven to 350 degrees. Butter a baking dish. In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside. In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper. Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese And another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

Cathy LoweWhat recipes can you make with leftover ham?
I usually dice the leftover ham and freeze it until I think of something. Omelets, add to Velveeta shells and cheese, or this...

1 pkg. Knorr/Lipton broccoli cheese rice

1/2 pkg. frozen broccoli thawed and squeezed

1 can cream of chicken soup

2 big handfuls Tillamook extra sharp cheddar

2 big handfuls diced ham

Splashes of milk and half and half

1/2 pkg. dry Stove Top tossed with 4 Tbsp melted butter

Garlic powder

Make the rice dish. When it's done stir in the soup, broccoli, ham, cheddar,

some milk and half and half and some garlic powder. Put it all in a greased

souffle dish, top with the stuffing, and bake at 350F for about 45 minutes.
HAM, SCALLOPED POTATO %26amp; LEEK CASSEROLE

4 cups thinly sliced, pared potatoes

2 cups cooked ham, chopped

1 leek, cleaned and thinly sliced

1 cup sliced onion (1 medium onion)

2 tbsp. flour

1 tsp. diced parsley

1 tsp. diced chives

1 tsp. salt

1/8 tsp. pepper

2-3 tbsp. butter (cut into 8-10 dots)

1 1/2 cups scalded milk

paprika and parsley for sprinkling

Preheat oven to 375掳F.

Grease a 2 qt. covered casserole dish. Parboil potato slices over medium heat in unsalted water for 5 minutes. Strain and replace water with cold water to stop cooking process.

In a small bowl, blend together flour, parsley, chives salt and pepper. Strain potatoes.

In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer. Dot each layer with some butter, reserving enough potatoes and butter for the top layer.

Sprinkle top with paprika and parsley.

Cover casserole and bake in 375掳F oven for 45 minutes covered, then 15 minutes uncovered.

Serves 4-6

Curried!! For a spicy twist add 陆 teaspoon curry to dry ingredients and omit the chives and paprika!

SOUR CREAM POTATOES AND HAM CASSEROLE

2 slices ham, 1/2 inch thick

8 med. potatoes, sliced thin

1 can cream of mushroom soup

1 c. sour cream

1 c. sliced onions

1 c. shredded cheese

1 tsp. salt

Dash pepper

Cut ham into 8 serving pieces.

Combine soup, sour cream, salt and pepper.

In a greased 2 quart casserole alternate layers of ham, potatoes and onions with sour cream mixture. Top with shredded cheese.

Cover casserole loosely with foil. Bake 2 1/2 hours at 350 degrees. (May take longer in deep casserole.) Let cool slightly before serving.

(I use a shallow casserole, putting the ham on the bottom only and alternating the other ingredients.) Serves 6.

TOMATO, HAM AND SHREDDED POTATO

CASSEROLE

4 eggs, slightly beaten

1 c. frozen vegetables (peas %26amp; carrots)

1 c. chopped ham

2 tomatoes, diced

1 c. cheddar cheese, shredded

1/2 c. milk

1 tbsp. minced onion

2 c. shredded potatoes

In a bowl, combine eggs, vegetables, ham, tomatoes, cheese, milk and onions. Set aside. Press potatoes onto and up sides of an ungreased 9'; pie plate. Pour ham filling into potato crust. Bake in a 350 degree oven for 40 minutes or until center is set. Let stand 5 to 10 minutes before serving. Yield: 6 servings.

SPLIT PEA AND HAM SOUP

1 ham bone

1 lb. dry split peas

4 cloves garlic, minced

1 tablepsoon each butter and olive oil

2 quarts water

2 bay leaves

1 lb baby carrots

1 lb spaghetti, broken into 3'; pieces

salt and pepper, to taste

1 can evaporated milk or 1 cup light cream or milk

Empty package of split peas into a colander or bowl. Sort through well, removing foreign matter and imperfect peas. Rinse well. Soak for two hours in 2 cups water.

In a large soup pot or Dutch oven, saut茅 minced garlic in 1 tablespoon of butter and 1 tablespoon olive oil until garlic golden, but not brown in color. Add ham bone, water in which peas have been soaked and 2 extra quarts of water, and bay leaves.

Bring to a boil for 1 minute; reduce heat and simmer, covered for 1 hour. Remove cover and simmer an additional hour or until soup is desired consistency. Add baby carrots during final 20-30 minutes of cooking (may be roughly chopped, if desired, or leave whole).

If you prefer a pureed soup, process using a hand blender before adding carrots.

Taste soup one half hour before serving; add additional garlic or garlic powder and salt and pepper, as desired. Bring a separate pot of water to a boil and cook spaghetti according to package directions. Drain.

Stir in milk or cream 10 minutes before serving. If you have any leftover ham, add at this time. Stir in spaghetti. Remove bay leaves before serving.

Note: Kids like to use the leftover soup the following day for an after-school snack by adding hot dogs sliced into 1 inch coins boiled briefly in a saucepan and stirred in. The soup thickens up overnight in the refrigerator, so stir in more milk or a pat of butter before serving.

Scalloped potatoes! Slice potatoes really thin, boil them a bit to soften them up, make a creamy cheese sauce with the cheese you have on hand, stir in the ham...mix some melted butter with parmesan cheese and bread crumbs and sprinkle on top...cover with foil and bake slowly until all heated through. Take foil off at the end to toast up the crunchy topping. Very good! My grandma also used to make ham salad...sam concept as chicken except with ham. Pulse your ham in the food processor to grind it....I never liked this, but she did!
you can add it to eggs, soup, or grilled cheese. You can cook scalloped potatoes and ham, Cheddar ham and potato soup, sandwiches, salads,as a pizza topping, a quiche, or stirred into mac and cheese.
add to; baked beans, macaroni and cheese,cold pastasalad, scalloped potatoes, scrambled eggs, bean soup,
Soup! Split pea, lentil, bean and ham, ham and potato... All good!
