Do you have a recipe for ham and corn chowder?

As always, amounts not necessary...just ingredients.

Cut up potatoes, ham and add 1 can of corn, or frozen equivalent, and 1/2 cup chopped onion. Combine in pot and add water until its all covered with about a half inch extra. Boil until potatoes are soft. Keep boiling while you mix up thickening, as you would for making gravy, and add it to the pot. Slowly stir it in so that it mixes well with the other ingredients. Season to taste with salt, pepper, garlic salt, season salt, or whatever you like to season with.





If you dont know how to make thickening- try this. Use one scoop of flour (about 3/4ths of a cup) and add hot water, stirring until its almost a porridge consistancy. Dont make it into a paste, and dont make it too runny. Mix until well blended and not lumpy.Do you have a recipe for ham and corn chowder?

Ingredients


25g/1oz butter


75g/2戮oz potatoes, sliced


1 shallot, sliced


1 tomato, chopped


5 tbsp white wine


150ml/5录fl oz chicken stock


1 slice of Parma ham, cut into small pieces


25g/1oz Dover sole fillet, cut into pieces


75g/2戮oz sweetcorn


3 tbsp double cream


1 tbsp fresh chives, chopped


salt and freshly ground black pepper


Method


1. Place the butter, potatoes, shallot and tomato in a large pan and sweat over a medium heat for two minutes.


2. Add the white wine and chicken stock and cook for a further ten minutes.


3. Add the Parma ham, Dover sole pieces and sweetcorn and simmer for three minutes.


4. Stir in the cream and chives and season to taste.


5. Serve in a large bowl.

Croutons, or oyster crackers


Butter or oleo, melted

Saute onion in butter until tender. Add remaining


ingreds. to pot and cook over low heat until


thoroughly heated. Garnish with croutons or crackers.


Makes 6-8 servings.
6-10 potatoes (depending on how much you want to make)


1 lb. shredded carrots (bought mine already shredded)


1 roll frozen creamed corn


1 lb. bag frozen white corn


1 lb. bag frozen yellow corn


1-2 pkg. ham (I used seasoning pieces in mine)


2 onions


2 stalks celery


1 bar cream cheese


2 cans cream of chicken soup (or your choice of any cream of soup)


garlic, salt, black pepper and parsley to taste





Boil potatoes and carrots together until tender. While potatoes are boiling, saute' onions, celery and ham together in a tiny bit of oil until meat is done and onions are tender. Add all corn to soup. Simmer 10 minutes. Add remaining ingredients and simmer until creamy.





I served this with shredded cheddar cheese on top.
Ham and Sweetcorn Chowder


Serves 4





A thick broth full of sweetcorn, potatoes, herbs and large chunks of ham is topped with grilled cheese to make a homely and satisfying family meal. Hope you like it!





700g old potatoes


175g lean cooked ham


1/2 large Spanish onion


570ml skimmed or semi-skimmed milk


725ml chicken stock or water


1 tsp dried mixed herbs


1/2 tsp paprika


Freshly ground black pepper


350g tinned of frozen sweetcorn


2 tbsp freshly chopped parsley


50g Parmesan cheese


50g low-fat cheddar cheese
