Anyone have a good ham gravy recipe?

Im baking ham with coca cola and i dont think i can make gravy with it though.Anyone have a good ham gravy recipe?
here it is..





HAM AND GRAVY





Preheat oven to 300 to 325 degrees.


If a sliced ham, you don't need to do anything to prepare it for the oven other than have the butcher tie it up with butcher's string.





If it is a whole ham (with the bone-in), you will have to remove the skin covering it, but the directions to do that are usually on the package covering the ham.





Place ham (sliced or not) in a large enough roasting pan or high sided cake pan. It's really good to add some cloves on top of the ham, it gives it a richer flavor. I usually don't do this, but only because I don't like cloves.





Cook ham approximately 15-30 minutes. While it is cooking, take 1 to 2 cans of sliced pineapples, drain juice into a bowl and let the cans sit for a couple of minutes to let all the juice drip into the bowl.





Add 1 box of dark brown sugar to the juice and stir.





Now pull the ham out and pour the pineapple juice and brown sugar mixture over the ham. Put the pineapple slices on the ham with toothpicks. Add maraschino cherries on top of the pineapples, if desired (to look nice).





Return the ham to the oven, and continue to baste every 15 minutes or so. There is usually a baking chart on the ham to let you know how long to cook it, but sometimes I lower the temperature to 275 to 300 degrees and let it cook for 1-3 hours, depending on the size, continuing to baste it so it doesn't dry out.





When done, remove the ham from the pan and drain the ham drippings and juice into a large pot. Put that on the burner and bring it to a boil. Add cornstarch or flour (at about a tablespoon at a time) to that, stirring continuously, until it thickens. This is not really a gravy but a thick sauce with a sweet ham flavor.





If you do not use the brown sugar (or at least not a whole box), it will still be fine, but you may not have as much juice or drippings. Also the gravy will be more like gravy and less sweet like a sauce.Anyone have a good ham gravy recipe?

Basic White Sauce. (Roux)


2T Butter.


2T Flour.

1 Cup of Milk.


Melt butter in a small saucepan. Add flour, seasonings to taste.


Gradually add the milk, stirring all of the time, (on medium heat), until sauce thickens, then cook for 3-4 minutes.

Mustard Sauce for Ham





2 eggs, beaten


1/2 cup sugar


5 Tablespoons dry mustard


2 teaspoons salt


Dash of pepper


1 cup half and half cream


1/4 cup vinegar





In top of a double boiler, beat two eggs. Mix together the sugar, mustard, salt and pepper. Add to eggs. Slowly stir in cream. Cook over boiling water until mixture thickens. Remove from heat. Slowly add vinegar while stirring.

Before You Start:





Bring a large pot of water, covered, to a boil over high heat to cook the noodles.

Pour the water into a large pan, salt lightly, and cover. Bring to a boil over high heat. Add the noodles, stir to separate, and cook according to the directions on the package until al dente. Drain in a colander, return to the pan, and add the butter and poppy seeds. Stir until the butter is melted. Keep warm, covered.





Step 2: cook the pork chops with savory sour cream sauce





2 teaspoons cornstarch


鈪?cup dry white wine (or omit wine and use 鈪?cup chicken broth)


鈪?cup fat-free reduced-sodium chicken broth


2 tablespoons Dijon mustard


2 tablespoons chopped fresh parsley


4 boneless pork loin chops (about 1录 pounds total weight)


Salt and pepper to taste


鈪?cup regular or reduced-fat sour cream (do not use fat-free)





1. In a small saucepan, whisk the cornstarch together with the wine and broth (or only broth). Add the mustard, and whisk until smooth. Chop enough parsley to measure 2 tablespoons.


2. Place the pork chops in a large nonstick skillet over medium-high heat. Season with salt and pepper. Cook until the chops are well browned on the first side, about 5 minutes. Turn and brown the second side, about 3 to 4 minutes. Remove the pan from the heat.

Step 3: make the steamed baby carrots

1 bag (16 ounces) baby carrots


1 tablespoon butter (optional)


Salt and pepper to taste





Pour the water into a saucepan with a tight-fitting lid. Place the carrots in a steamer basket and place the basket in the saucepan. Cover, bring to a boil over medium heat, reduce the heat to low, and steam until the carrots are tender, about 10 minutes. Turn the carrots into a serving bowl, add the butter, if desired, and season with salt and pepper. Place the bowl on the table.





Step 4: serve





1. Place 1 pork chop on each of 4 dinner plates. Add a serving of noodles next to the chops. Spoon some of the sour cream sauce over the chops and noodles and serve at once with the carrots as an accompaniment.


2. When ready for dessert, divide the cantaloupe among 4 dessert bowls and pass the chocolate cookies on a plate.

1/2 c. (125 g) butter, melted


3 tbsp. dry mustard


1/2 c. brown sugar


2 cloves garlic, crushed


Paprika





1. Mix sherry, butter, mustard, brown sugar, garlic and paprika.


2. Marinate ham steaks in the mixture for at least 2 hours.

What is your honest opinion about this ham recipe?

I am bringing the ham to Thanksgiving dinner at my brother's house this year. This woman at work told me that after I thaw out the ham to prepare it to cook, to put an inch of water in the bottom of the pan and then pour an entire can of coca-cola over the ham. She swears by it and says it makes the meat taste so good and tender. I was really leary about doing this but now I wonder if it's not that bad of an idea to try once. What do you think?What is your honest opinion about this ham recipe?
Ths acids in the coke would help to tenderize it but honestly I don't think it would be a good Thanksgiving dinner to try at someone else's house if you're really curious do it when you can throw it away if it sucks My family has done that with brisket and it is good but a ham is more salty naturally and it just doesn't sound good to me. I'd look for a good maple/brown sugar glaze and just cook the ham and glaze safe and good.What is your honest opinion about this ham recipe?

My mom always bakes ham in 7-up. The acid in the soda really does tenderize the meat. I think she uses 7-up because the flavor goes better with the pineapple rings she garnishes her ham with.





I wouldn't be surprised if Coke has the same effect, but I can only vouch for 7-up.

Pouring soda over ham tastes great. It adds a sweet flavor to the ham. Similar to a honey ham and makes it more tender.
Coca Cola Ham is an old Deep Soutern stand-by: it will work, it will be delicious and it will be EASY - keep basting use regular coke - not diet

Actually I do that with my hamburgers! you can't taste the coca-cola at all. it just makes it tender and juicy.
It is a great idea, that is almost the same as i do min . Ill tell you how. Well the night before i get the ham ready I will stab it a few times to give it some holes to suck up all the liquid. Then i pour some coke over it and then i rub it down with brown surgar I repeat the steps a few times. and then put it in the oven in the morning. You will need to baste it once an hour when you do baste it pour a fresh can of coke over it. you will know when it;s done because the meat will pull off the bone. It is so tasty. It tastes like a honey ham kinda and it is so tender. Enjoy!!!!! and i dont use any water.

    If it hasn't been opened, it should have an expiration date on it. Go by that. But, it should last a couple of weeks refrigerated (it's been cured). If it's been opened, I find that ham goes bad after a few days. It gets all slimy and sour smelling.
    When is the expiration date? It needs togo in by the expiration date.
    it is not able to go in the freezer now you need to make sandwiches and use it when you can when cooking

    Use the following portions to make a brine for a 3 lb piece of pork


    loin. Scale it up for larger portions.





    1 cup salt


    1 cup sugar


    1 tsp Prague #1 [ powder ]


    2 qts water





    Soak the fresh (not previously frozen) pork in this brine for 12


    to 24 hrs.





    Cook the cured ham in water at 165F until the internal temperature


    of the ham is 152F. Cool and refrigerate overnight. You now have


    what is known as ';boiled'; ham.





    You can also bake the ham the same way, 165F oven till the internal


    temp reaches 152F. This will give you a drier ham.





    If you have a smoker, smoke it for a few hours before boiling.


    You can also put liquid smoke in the brine but I have never done


    it.





    I am guessing at the brining time as I inject about 10% of the


    weight of the meat (in brine), directly into the meat and only


    brine for about 6 hrs. This is called pumping and cuts down the


    brining time and makes a more consistant job of it.

    PS. If you are going to do a bone in ham


    you should use the pumping method be sure to pump the joints there is where the spoilage starts around the bone and the joints. This recipe calls for cooking the meat to an internal temperiture of 152*F


    that will help but for a bone in ham I would raise the temp. to 165*FRecipes for curing ham?
    Here is how they did it in the old days in the South. I was young, but I still remember. The fresh hams were placed in a hollowed out poplar log that looked similar to a canoe. Salt was thickly spread between the hams and the entire meat was covered. They were left in the salt for 3 weeks and hung in the bottom of the smokehouse that had a dirt floor. A slow burning fire of green hickory wood was continuously kept under the hams producing lots of smoke. The meat was smoked for about another two weeks or so until the hams were dry and had stopped dripping. Then they were hung in the upper level of the smokehouse until used.     The most traditional way to prepare a whole ham is to bake it.





    * For a ham that has only been partially cooked, you will need to allow about 20 minutes per pound in a moderate (350 degrees F/175 degrees C) oven.


    * A fully cooked ham will require about 10 minutes per pound in order to be heated all the way through.





    Although ham is perfectly delicious all by itself, you can make it extra-special by using a glaze. The most popular glaze recipes contain combinations of fruit juice, wine or whiskey, honey, mustard, brown sugar, fruit preserves and spices. Brush some of the glaze over the surface of the ham before placing it in the oven.





    To help keep your ham moist and juicy:





    * Place the ham cut-side down in a baking pan. If it's going to be in the oven for more than an hour, you also may want to place a foil ';tent'; over your ham in order to keep it from drying out.

    2 slices sourdough bread, sliced 1/2 inch thick


    1 tablespoon mayonnaise


    4 slices shaved smoked ham or brown sugar ham

    1. Spread bread slices with mayo.


    2. Top 1 of the bread slices with ham, tomatoes, cheese and remaining bread slice.


    3. Cook, over med heat, in skillet or on griddle that has been sprayed with no stick cooking spray, for 5 minutes on each side or until lightly browned.
    Add sweet pickles,onion and good hot mustard. thinly sliced ham has richer flavor and I prefer baby Swiss.Rye is my choice of bread.

    Put ham and cheese between your favorite bread, butter each side of bread and cook it like a grilled cheese to make a ham and cheese toastie, yum

    Toast split onion roll. Add spread if desired, and place cheese on each side of roll. Add all your shaved ham and put both parts ';together';. Put in toaster oven till cheese melts, take sandwitch out and pull off the top in order to add lettuce and tomato.(This might be messy but you sure don't want to add these items prior to melting cheese, or you will have soggy lettuce and mushy tomato!!)

    Spread buttered split rolls with mustard; top with folded ham slices, cheese, and sweet onion slices. Place subs under the broiler, about 4 inches from the heat source, and broil for 3 minutes, until cheese is melted.

    I don't cook much but I am trying to learn. Can someone answer these questions about my ham recipe. I am making this for a dinner party.





    1) My recipe says to ';Remove the rine from a large whole ham and score the fat in the traditional diamond pattern.'; I understand what removing the rine is, but what is scoring the fat in the ';traditional diamond pattern';?





    2) Also, it says, ';Stud it heavily with whole cloves and place it in a large roaster.'; Where do I buy cloves (what area of the grocery store) and what do they look like. (I told you I am an amateur!)





    3)How do I ';stud'; it with cloves?My Christmas ham recipe questions?
    The scoring helps the glaze stay on the ham.


    The cloves are found in the spice shelves (these are usually organized alphabetically). Don't accidentally get Ground Cloves. (the same thing only ground into a powder). The whole cloves look like tiny sticks with dried flowers on the end.)


    The cloves are pushed into the blocks between the incisions like little darts.

    Stud is to push the pointed ends of the cloves into the ham in a random pattern
    1) Start at one end of the ham and cut parallel lines at a slight angle from one side to the other. Turn the ham 180 degrees and repeat from the other side so that the lines form little parallelogram (diamond) shapes.





    2) Cloves are a spice that's shaped roughly like a brown tooth with roots. (I can't think of a better way to describe them.) You can find whole cloves in the spice aisle. Don't buy the powered cloves. . .you can't do step 3 with those. Make sure you get the whole ones!





    3) To stud the ham, push the ';root'; part of the clove into the center of each diamond shape.

    The pattern is done by just using a knife and cutting a diamond pattern into the ham. Sort of like a chain link fence design.





    Whole cloves are bought at any grocery store. They sor of look like a little wooden paneling nail. It has a shaft with a head on it.





    As for how to stud... Well I just push the cloves into every spot the diamond pattern crosses. I never had to put in piolet holes or pre poke the holes. Just push in the cloves %26amp; your good to go. The whole cloves are pretty tought and you don't have to worry that much about them breaking.
    but it already smoked right from the grocery store. put pineapple on it, put in the oven, and cook until borowned.

    Ingredients (serves 2)





    * 6 slices ham


    * 2 tbs pine nuts


    * 500g gnocchi


    * 1/4 cup basil pesto


    * 100ml cream fraiche





    Method





    1. Heat a non-stick frypan until hot.


    2. Add the ham and cook for 5 minutes over medium-high heat, turning until golden and crisp, remove from the pan. When cool enough to handle, break the ham into pieces.


    3. Add pine nuts to same pan and cook over medium-high heat, stirring for 1 minute or until golden, remove from pan.


    4. Meanwhile, cook the gnocchi in a large saucepan of boiling water according to packet instructions, then drain. Return to large saucepan and add the pesto, creme fraiche, half the ham and half the pine nuts. Season to taste and stir gently to combine.


    5. Divide the gnocchi among serving bowls, then top with remaining ham and pine nuts
    What kind of ham ....If it is bone in 18 min.a pound cover with foil maybe if you would like it sweet pineapples all over top and dark brown sugar with a little pineapple juice mixed together and poured over the top and bake at 325 w/foil in deep pan for above time or if you have boneless, cube and make Real mac %26amp; cheese w/ham, very Good. email me if you would like that recipe I have a very a good one.dot619 @ yahoo I will send it to you also very good for leftovers

    Ham and broccoli ring








    1 cup broccoli (chopped)


    1 1/2 cups ham (diced)


    3/4 cup chedder cheese (shredded)


    2 pakages crossiant rolls











    Lay the crossiant rolls on a sprayed cookie sheet in the shape of a circle. So the points are facing the edges of the cookie sheet. Make a sturdy base with the widest part of the dough, make sure there are no gaps.





    Mix broccoli, ham and cheese in a medium bowl.





    Spoon mixture on the crossiant about one inch across the dough ring and about one inch high, or until all the mix is used.


    Fold the points of the dough over the mix and press into the inside of the ring. It is best if there are some openings on the top of the ring.





    Bake according to the instructions on the crossiant tube.


    Let cool about 10 minutes.





    You can use spinach if you don't want to use broccoli

    layer potatos, onions and diced ham and shredded cheese in a crockpot. Season with pepper and salt if desired. Add half and half to nearly the same level as the top layer, End with a layer of cheese. Cook on high till finished, about 5-6 hours depending on your crockpot.





    Add a couple cups of chopped ham and some peas to the mac and cheese you just made for a great hot dish.





    You can also chop that ham and freeze if for future soup or hotdish or sandwiches
    dice it up and toss it into a bowl along with bisquick and grated sharp cheddar or pepperjack cheese. Use your hands to mix all together. It only needs to be moist enough to hold together to be lightly rolled into a ball, so if the moisture from the diced ham and cheese isn't quite enough add only the smallest amount of milk(as in teaspoonful) to just be able to roll it into little balls. Bake at 375 for 8-12 minutes or until light brown. Delicious as is or with a dip.
    Throw that ham in some Lima Beans with some olive oil and let them simmer for about 2 hours on low until the beans fall apart.
    Chop it into an omelet or put it in your next scalloped potato recipe.

    DON'T GET THE SHANK END.


    For a 12 to 15 pound ham you will NEED the following:





    A deep roasting pan, dutch oven or deep baking dish just big enough for the ham to fit into with enough room to let you turn it over.





    An Ice Pick! This is very important!








    Maple syrup - buy a quart and use most of it.


    Dry mustard, about 2 tablespoons. Optional - Whole cloves to stick in the ham, but not necessary.





    Directions:


    1. Trim any skin off the ham but leave some of the fat - less than 1/4 inch thickness. Score the fat down to the meat in a diamond or tic-tac-toe pattern, your choice.





    2. Take the ice pick and stab the ham all over, and I mean many, many stabs. Use up some of your latent aggression.





    3. Take the dry mustard and massage it into the ham. If you must, stick whole cloves into the ham, as many as you want.





    4. Put the ham in the pot. Pour in the maple syrup until it comes up at least 1/2 way on the ham, a little more won't hurt, it won't be going to waste.





    5. Place the ham in a COLD oven and turn the temp control to 300 degrees F. Set timer for 30 minutes. After 30 minutes reduce heat to 250. and turn the ham over in the syrup.





    6. Continue cooking for 3 hours for a 12 pound ham, add 30 minutes for each 2 pounds over that, turning the ham every 30 minutes. This is a long, slow method that will have remarkable results.





    7. At the end of the baking time, remove ham from pot, allow to drain on a rack for 20 minutes, then slice. When the liquid left in the pot has cooled, strain it through a coffee filter and freeze it, you can use it two more times.


    After that it loses a bit of flavor or becomes too salty.





    When the ham cools, you can divide it into the following: ((Or however you wish))


    slices (cut the biggest parts into this) shredded (the outer part is best for this, whatever is falling apart) cubed (chop up the small and weird shaped pieces)ham bone for soup. Package everything in Ziploc bags (double bag it!) or big containers with lids, put in fridge (or freezer if you can't get to it right away) and GO TO BED! You will be tired! (I got several Ziploc gallon bags FULL of meat!)

    25 g whole cloves


    60 ml dark corn syrup


    475 ml honey


    150 g butter


    Preheat oven to 325 degrees F (165 degrees C).


    Score ham, and stud with the whole cloves. Place ham in foil lined pan.


    In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.


    Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

    HOLIDAY HAM





    1 country style smoked ham


    2 c. water


    20 - 30 whole cloves


    one (16 ounce) can sliced pineapple rings


    1 cup Maraschino cherries, cut into halves


    1 cup brown sugar


    2 tablespoons flour


    sprinkling of garlic powder


    sprinkling of onion powder


    sprinkling of black pepper


    olive oil spray








    Place ham in roaster. Add 2 cups water, and cover roaster.


    Bake in a 325掳F oven, allowing about 21 minutes per pound for a large ham, about 25 minutes per pound for a smaller (up to 12 pounds) ham or half ham. If the ham has an exposed bone, cover this with foil. Keep an eye on the ham as it cooks and spray occasionally with olive oil during the first part of the cooking. Continue roasting until a thermometer inserted in center reads 160 degrees. Be sure thermometer is not touching bone.





    When ham is done, remove from oven. Lift off rind. Using a sharp knife, score fat surface crosswise (into intersecting squares) and dot with cloves at each intersection.





    To prepare the ham coating, combine brown sugar and flour. Rub this mixture over the scored ham. Sprinkle over lightly with garlic powder, onion powder, and black pepper.





    Place a pineapple slice on the ham so that one of the cloves will be in the center of the circle. Cover the clove with a Maraschino cherry half. Each cherry half should be placed in the center of a pineapple slice. Continue until ham is covered decoratively with pineapple slices and cherries. Brown, uncovered, for 20-25 minutes in a 400掳F oven or until ham takes on a beautiful glazed coloring.





    Note: Cut any remaining pineapple slices into halves and use to decorate around the ham at the bottom of the serving plate, alternating with sprigs of parsley or kale for garnish.
    Put your ham in foil pour a 20 oz. coke in it and put pineapple slices on top wrap it up and cook it in the oven for 3 hours on 350.
    You have to google Southern Maryland Ham. I am pretty sure they use fresh ham for this one. I know it isn't what you are looking for right now but if you and I ever meet up, we have to make one of these. It does sound very good and very time consuming to make.

    1. If you have a pan large enough to use without using foil, that's the pan you want to use. You'd rather use a pan that you can use a lid with.





    2. Spray the pan that you're going to us with the Cooking Spray





    3. Cover the ham with the Mustard.





    4. Now cover the ham with the sugar and bake at 350* for about 3.5-4 hours.











    Awesome Green Beans





    1 Large Cooking Onion cut into strips


    1 Pound of Bacon


    1 Large Red Pepper cut into strips


    16-32 OZ. Canned or Frozen Green Beans


    Salt %26amp; Pepper to Taste

    1. In a large pan, fry all of the bacon reserving the grease. Don't hard fry the bacon. You want it to be a little soft. When it's fried soft, you get more oil from it.





    2. Set all of your bacon aside.





    3. Now mix all of your onions, peppers, Accent, salt, and pepper in the pan and fry to desired tenderness.





    4. Push peppers and onions to one side of pan and add your green beans.





    5. Spread them out in the pan. Cook them on medium heat for about [5 minutes if frozen], 3 minutes or less if from the can.





    6. Once you're satisfied that the beans are hot enough, add the peppers and onions into the beans.





    ((((( I'll usually cover mine with another skillet while the beans are cooking. And I'll cut up the bacon so I can sprinkle it on top when finished.)))))





    This receipe just gets better the more you make it. The only problem is that it's not too healthy. (The bacon grease.)

    Make crosswise slits, 1/2 inch apart, halfway through ham to where knife touches bone. Place ham in deep bowl and barely cover with water. Stir in sugar. Soak at least 2 days in refrigerator. Drain.


    Place ham in roasting pan, lined with enough foil to wrap completely. Pour honey or brown sugar and orange juice all over pork. Stick cloves all over meat. Wrap tightly with foil.     1 packaged hash brown potatoes


    4 c. very hot water


    1 tsp. salt


    1 can whole kernel corn, drained


    1/3 c. chopped green peppers

    1 1/2 c. shredded process American cheese


    1 c. milk


    1/4 c. butter, melted


    1 egg


    1/3 c. Bisquick baking mix


    1 tbsp. sugar


    1/4 tsp. curry powder





    Preheat oven to 350 degrees. Cover potatoes with water in 2 1/2 quart bowl. Stir in salt, let stand uncovered 15 minutes. Drain thoroughly. Layer half each of the potatoes, corn, green peppers, onion, ham, and cheese in ungreased square pan, 9';x9';x2';; repeat. Mix milk, butter and egg. Beat in baking mix, sugar, pepper and curry powder until smooth; pour over top. Bake until top is golden brown and center is set, about 50 to 60 minutes. Serves 6.



    I usually cook the ham as described, but I make a glaze of brown sugar and water. Mix it to your desired consistency and then continually brush ham as you cook it. Use the leftover glaze to put on more when it's done.
    Rub Brown Sugar on the outside and bake it at 275 for 4 hours. The brown sugar caramelizes and its wounderfully moist.
    Brush your ham with maple syrup prior to baking to make a really nice maple glazed ham.

    Go to your local library and look for Michael Ruhlman's book, ';Charcuterie';. It's a pretty good book.





    For your ham, I would suggest that you brine the fresh ham before smoking it. Brining will introduce flavors into the fresh ham.





    Smoking may not penetrate deep enough to flavor the whole ham.

    SMOKED HAM SLICE WITH APRICOT GLAZE





    Smoked ham slice, cut 1 inch thick


    1 can apricot halves


    1/2 tsp. ground cloves


    1/4 tsp. allspice


    1/2 tsp. cinnamon





    Drain apricots and save juice. Place ham slice on broiler rack and insert broiler rack and pan so the top surface of the meat is 2 to 3 inches from the heat. Sprinkle with spices and broil until nicely browned, about 10 minutes, basting occasionally with apricot juice. Turn, sprinkle ham with remaining spices, continue broiling, basting with apricot juice until done, about 10 minutes.


    Five minutes before ham slice is done, arrange apricot halves, cut surface down, on ham and continue broiling until ham is done and apricots are lightly browned. Spoon basting liquid over ham and apricots before serving.

    1 box brown sugar

    15-20 lb. smoked ham


    Orange juice concentrate





    Cover ham in water mixed with 4 pounds sugar. Let set for 2 days and nights. Dry ham and make cuts in top of ham. Mix honey, orange juice and mustard and brown sugar. Spread over ham completely. Pour juice mixture over ham, saving enough juice to baste 2 times during cooking. Cloves can be added for flavor. Cook at 200 degrees for 18-20 hours

    SMOKED HONEY HAM





    1 canned or precooked ham (5 lb.)


    1/2 c. honey


    1/4 c. brown sugar


    1 can (8 oz.) sliced pineapple


    Maraschino cherries





    Remove cooking grid and preheat grill. Center ham on rotisserie rod. Adjust holding forks; test balance. Turn grill to medium low setting. Attach rotisserie and start motor; cook for 30 minutes. While ham is cooking, heat honey and brown sugar until easy to pour. Cook ham another 30 minutes, basting with honey mixture as it turns. Garnish with pineapple and cherries to serve.     Anyone got any good recipes to use when you're trying to use a ham bone?





    The only two things that come to mind are bean soup or split pea soup. You got anything else?Ham Bone Recipes?

    1/8 teaspoon Tabasco or other hot pepper sauce


    2 to 3 tablespoons bacon drippings or butter


    1 large onion, chopped


    1 large clove garlic, minced


    1 can (about 15 ounces) tomatoes, chopped


    1/4 cup finely chopped parsley


    1/4 teaspoon ground thyme


    1/4 teaspoon ground marjoram


    1 tablespoon chili powder, or to taste





    In deep stock pot, cover beans with cold water and and let soak overnight. Next day, add ham bone, salt, and Tabasco sauce. Bring beans to a boil; reduce heat. Cover and simmer for 1 hour, or until beans are tender. Drain beans, reserving liquid. While beans are cooking, heat bacon drippings or butter in a skillet; add onion and garlic and cook over medium low heat until onion is tender. To skillet, add tomatoes, parsley, thyme, marjoram, chili powder, and 1 cup of the reserved cooking liquid. Taste and add salt if necessary. Cover and cook over low heat, stirring occasionally, for about 45 minutes. Combine tomato mixture with beans; simmer over low heat for 15 minutes. Remove ham hock or ham bone before serving.





    Serve with cornbread and glass of sweet tea!

    I love ham with split pea soup and it freezes really well.





    This recipe uses a ham bone, if your ham came with one, great! Cut off the larger pieces of ham and set aside, follow the recipe and when it's done, chop up the saved ham pieces and add to the soup.





    The recipe says to simmer the peas with the ham bone overnight, but you can also make it in a crock pot, put it together in the morning, turn it on low,and have nice split pea soup for dinner when you get home. Freeze the rest.
    This is what I use my left over ham in.





    Split Pea, Ham, %26amp; Sausage Soup





    12 oz dried split peas


    2 -14 oz cans beef or chicken broth


    16 oz polish or kielbasa sausage, cut in bite size pieces (optional)


    1 cup chopped ham (optional)


    1 cup chopped carrots


    1 onion, chopped


    1 bay leaf


    salt and pepper, to taste








    Soak peas overnight in water, drain. Put peas, broth, ham, carrots, onion, bay leaf and seasonings in crock-pot.


    Brown sausage in skillet and add to crock-pot. Fill to 2” from top with water, cover, and cook on low for 10 hours or high for 5 hours. Remove lid for last hour to thicken or add cornstarch mixed with cold water to soup. Remove bay leaf. Serve with cornbread and honey butter.

    Awesome Ham Pasta Salad





    8 ounces ziti pasta


    1 pound cooked ham, cubed


    1 large red bell pepper, cut into 1 inch pieces


    1 large green bell pepper, cut into 1 inch pieces


    1 large red onion, coarsely chopped


    15 small sweet pickles, copped, juice reserved


    1 cup cherry tomatoes, halved


    1 cup mayonnaise


    1/2 cup sour cream


    2 1/2 teaspoons beef bouillon granules


    1 tablespoon white vinegar


    1/2 teaspoon salt


    1/4 teaspoon ground black pepper


    2 cloves garlic, minced





    Directions:





    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.2 In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.3 In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.






    Add cubed ham to your favorite homeade mac and cheese. Put it in a casserole, add to scalloped potatoes or make this ham ball.


    It sounds so good, I would probably eat it all before getting a chance to freeze it. If you have a lot of ham, you could make a few ham balls freeze them and use during the holidays. I would spice this recipe up with garlic powder or fresh garlic, black pepper.


    HAM BALLS





    2 lb. ham, ground


    1 c. cracker crumbs


    2 eggs


    Pinch salt





    SAUCE:





    1 c. brown sugar


    1/2 c. vinegar


    1 tbsp. mustard


    1 c. hot water





    Mix the first four ingredients together and shape into balls. Pour sauce over balls and bake 1 hour at 325 degrees or in a crockpot for 2 hours on high.



    Carve all the ham up, cube or slice and freeze it in snaplock bags.


    That way you can use it for whatever you like later, remembering not to add too much more salt, as it tends to become more salty after freezing.


    It is perfectly safe to use in pasta's, quiches and savouries etc.


    Also wrap the bone well and freeze that too, great for stock or soup as required.

    Ham and Scalloped Potatoes








    6 medium boiling or baking potatoes (2 pounds), peeled


    3 tablespoons margarine or butter


    1 small onion (1/4 cup), finely chopped


    3 tablespoons all-purpose flour


    1 teaspoon salt


    ¼ teaspoon pepper


    2 ½ cups milk


    1 ½ cups fully cooked ham, diced


    1 tablespoon margarine or butter








    Heat oven to 350∫. Grease 2-quart casserole.





    Cut potatoes into enough thin slices to measure about 4 cups.





    Melt 3 tablespoons margarine in 2-quart saucepan over medium heat. Cook


    onion in margarine about 2 minutes, stirring occasionally, until tender.


    Stir in flour, salt and pepper. Cook, stirring constantly, until smooth


    and bubbly; remove from heat.





    Stir milk into sauce. Heat to boiling, stirring constantly. Boil and stir


    1 minute. Stir in ham.





    Spread potatoes in casserole. Pour sauce over potatoes. Dot with 1


    tablespoon margarine.





    Cover and bake 30 minutes. Uncover and bake 1 hour to 1 hour 10 minutes


    longer or until potatoes are tender. Let stand 5 to 10 minutes before


    serving.

    Just slice about 2/3 of the ham for sandwiches or to fry/grill up alongside eggs, hashbrowns and toast.

    Ham is very good used as a seasoning in vegetables, like cabbage, field peas, at least in southern cooking, we do. It can be used in potato salad too. Also in soup or in a sauce to ladle on a baked potato; an Impossible Quiche. Not to mention a Ham 'n Cheese sandwich. How about a Ham 'n Potato Casserole? I'm sure I'll think of other dishes it can be used in after I submit these thoughts.
    I make a Ham and Barley soup. I simmer the ham bone in stock ( chicken or veg) with Potatoes for about 20 in. I add a can of corn, some frozen peas and a couple of table spoons of honey. When it's boiling I add the barley, cook until done,season to taste. It freezes well
    Make a ham and cheese calzone with the ham, your favorite cheese, and refrigerated pizza dough. Bake at 375 for about 18 minutes and then wrap and freeze. Bake at 350 until heated through when your ready to eat them.

    1 can of sliced pineapples


    1 2liter bottle of 7up or any lemon-lime soda


    1 box light brown sugar


    **tip** if you already have a box of brown sugar but it is as hard as a brick, tear off the box, and wax paper that the sugar normally comes in, and put the brick (brown sugar) into a plastic bag with either a whole slice of bread, or a half of an any apple, and close bag. in about 1 hour, your brick will be soft brown sugar again.








    i told my cousin to cook her ham this way, and she now ALWAYS makes her hams like this. buy a ham, and cut off the outside skin and most of the fat that will be under the skin (as much as you can). then get a very large heavy pot, and put the ham in the pot (its ok if the ham wont fit all the way inside the pot). pour either 7up, or any lemon-lime soda into the put untill the pot is a little more than half full, and cook ham on low heat for approx. 45minutes. if the pot that you used doesnt fit the entire ham inside, after the 45minutes, turn the ham over to cook the other side of it, for about 30-40minutes (you may need to add more soda). while that is cooking, you can make the glaze for the ham. to make the glaze, you will need the juice from a can of sliced pineapples, and light brown sugar. in a small pot, pour the pineapple juice and crumble brown sugar into the pot (you will b doing some tasting to find out how much brown sugar u will need to add, but i normally use almost half of an unopened box of sugar). on very low heat, stir the pineapple juice and sugar, until the sugar has fully dissolved, adding more if needed. once that is done, and your ham is finished boiling, get a deep pan, and first spray it with non-stick cooking oil, and then line it with aluminum foil. get two large forks, and pick up the ham, and put it in the foil lined pan. with the forks, poke holes all over the ham, and as deep as you can, then pour the juice mixture over the ham, and with toothpicks you can decorate the ham with the sliced pineapples. in the last step, cover the ham with foil, and bake in oven for about 35-40 minutes on 375 degrees. then remove from oven, let it cool for about 30 minutes, cut and serve.

    Baked Christmas Ham





    it's time consuming, but it's great.





    5 hours cook time. 1 hour prep.





    cooking time may vary depending on the size of ham you get. we usually use a 20-30 pound.





    20-30lb whole smoked ham


    1 (16 ounce) can pineapple slices, set aside the liquid (if you have a smaller ham use the 4 ounce can)


    8 maraschino cherries, whole, set aside 2 teaspoons liquid (i use the red and the green colored ones)


    2 (16 ounce) boxes brown sugar (i use dark brown sugar)


    whole cloves


    1 cup honey


    wooden toothpicks





    Wash ham throughly.


    Cut diagional criss crossed lines one inch apart, one inch deep.


    When you are finished the cut lines should look diamond shape.


    This has to be done all around the whole ham.


    Insert whole clove in each crossed section.


    Try to push the clove down at least an inch into the meat.


    Bake one hour covered, in very deep baking pan, at 275 degrees.


    This is where my GrannyN would have the ham in a papper bag.


    Drain off fat.


    Bake another hour covered at 275 degrees.


    Drain off fat.


    Let ham sit uncovered while you warm the honey.


    Pour honey over the ham, and cook uncovered for an hour at 300 degrees.


    Remove from oven and drain.


    Let sit until cool to touch, about 30 minutes.


    The ham top should be a little sticky.


    If not it's ok.


    When cool, using your hands, pack brown sugar all over the top and sides of ham.


    Pushing the sugar in the cut slices.


    Push tooth picks through the cherries.


    Place pineapple rings on top of ham using toothpick with cherries to hold in place.


    Insert meat thermometer.


    Mix together pineapple juice and cherry juice.


    Divide.


    Pour half of mixture in bottom of pan.


    Cover, and bake for 2 hours at 350 degrees.


    Check doneness.


    Usually at this point the ham is usually done.


    Last 30 minutes, Uncover and pour remainder of pineapple juice on top.

    Cottage Ham

    I grew up eating cottage ham, a one-pot meal my mother made with green beans 鈥?instead of cabbage 鈥?added to the simmering smoked pork shoulder and potatoes. The cottage ham is all meat, no bone, and sells for $3.99 a pound or less.





    1 smoked pork shoulder roll, 1 1/2 to 2 pounds


    1 onion, peeled


    1 bay leaf


    1 1/2 tablespoons sugar


    6 or 8 crushed peppercorns


    4 to 6 redskin potatoes, unpeeled


    1 pound green beans





    Put the pork in a large pot with a tight-fitting cover. Cover with water. Add the bay leaf, onion, peppercorns and sugar. Cover and cook the meat for 45 minutes per pound.





    Halve the potatoes if very large. Thirty minutes before the meat is done add the potatoes to the pot.





    Remove the ham to a serving platter and let it rest for 5 to 10 minutes before slicing. Add the beans to the pot while the meat rests and cook 5 to 10 minutes, with timing depending on the size and age of the beans and how you like them cooked.

    INGREDIENTS:





    2 cups fresh green beans, trimmed


    2 cups fresh yellow wax beans, trimmed


    1/4 cup chopped onion


    1/4 cup butter


    3 Tbsp. pine nuts or cashews, toasted


    1/2 tsp. dried tarragon leaves


    1/2 tsp. salt


    dash pepper





    PREPARATION:





    Place green and yellow beans in heavy saucepan and add water to cover. Bring to a boil over high heat, reduce heat to medium and cook for 8-10 minutes until beans are tender. Drain well in colander. Add all remaining ingredients to beans and cook over medium heat for 1-2 minutes to melt butter and blend flavors, stirring constantly.

    Garlicy red smashed potatoes.





    Ingredients;





    6 Red-skinned potatoes, washed and unpeeled


    3 cloves Garlic, smashed


    1/4 cup Low fat, low sodium vegetable stock


    1 tbsp Nonfat yogurt


    1 Green onion, chopped


    1/4 tsp Each salt, pepper and nutmeg





    Preparation;





    1. Cut potatoes into 1 1/2 inch chunks. Boil potatoes and garlic in salted water until tender, about 10 to 15 minutes. Drain. Place pan on low heat to dry the potatoes, shaking occaisionally.





    2. Add hot stock and yogurt. Using and potato masher, mash coarsely. The mixture should look lumpy. Stir in the chopped onion and spices. Makes 4 servings.








    Superb Ham and Bean Soup





    Meaty ham bone and any leftover scraps of meat


    1 16oz can pinto beans


    1 16oz can black beans


    1 16oz can black-eyed peas


    1 16oz can great northern white beans (or navy beans)


    1 16oz can red kidney beans


    1 can Progresso lentil soup


    6 quarts water


    2 medium onions, coarsely chopped


    1 28oz can crushed tomatoes


    2 cloves garlic, minced


    Juice of 1 lemon


    Pinch of ginger


    2 celery stalks, split lengthwise


    1/2 lb Ditalini pasta (precooked)


    Salt and pepper to taste





    Place ham bone, meat scraps, celery stalks, minced garlic, ginger,


    and chopped onions in a large stock pot (10 qt). Add approx. 6


    quarts of water so the pot is about 3/4 full. Place lid on pot


    slightly off-center to allow steam to escape. Boil on medium-high


    heat for 3 hours, adding enough water every 1/2 hour to keep the


    pot at 3/4 full.





    Remove ham bone and take off meat, cutting into small bits, discard


    fat. Remove meat scraps and cut into small bits, discard fat.


    Remove celery stalks and discard. Replace lean meat into soup pot.


    Drain water from all cans of beans and add to pot. Add lentil


    soup, crushed tomatoes, and lemon juice. Reduce heat to medium.





    In a separate pot, boil the 1/2 lb of Ditalini pasta until just


    tender. Drain and add pasta to the soup pot. Continue to cook on


    medium heat for 1/2 hr. Add salt and pepper to taste, (we found


    none is usually needed). Reduce heat to simmer until ready to


    serve.





    Makes 15-20 servings. Soup may be frozen.

    HOLIDAY HAM


    1 country style smoked ham


    2 c. water


    20 - 30 whole cloves


    one (16 ounce) can sliced pineapple rings


    1 cup Maraschino cherries, cut into halves


    1 cup brown sugar


    2 tablespoons flour


    sprinkling of garlic powder


    sprinkling of onion powder


    sprinkling of black pepper


    olive oil spray


    Place ham in roaster. Add 2 cups water, and cover roaster.


    Bake in a 325掳F oven, allowing about 21 minutes per pound for a large ham, about 25 minutes per pound for a smaller (up to 12 pounds) ham or half ham. If the ham has an exposed bone, cover this with foil. Keep an eye on the ham as it cooks and spray occasionally with olive oil during the first part of the cooking. Continue roasting until a thermometer inserted in center reads 160 degrees. Be sure thermometer is not touching bone.


    When ham is done, remove from oven. Lift off rind. Using a sharp knife, score fat surface crosswise (into intersecting squares) and dot with cloves at each intersection.


    To prepare the ham coating, combine brown sugar and flour. Rub this mixture over the scored ham. Sprinkle over lightly with garlic powder, onion powder, and black pepper.


    Place a pineapple slice on the ham so that one of the cloves will be in the center of the circle. Cover the clove with a Maraschino cherry half. Each cherry half should be placed in the center of a pineapple slice. Continue until ham is covered decoratively with pineapple slices and cherries. Brown, uncovered, for 20-25 minutes in a 400掳F oven or until ham takes on a beautiful glazed coloring.


    Note: Cut any remaining pineapple slices into halves and use to decorate around the ham at the bottom of the serving plate, alternating with sprigs of parsley or kale for garnish.





    ******KAHLUA BAKED HOLIDAY HAM


    10 lb. precooked ham


    3/4 c. brown sugar


    1/2 c. kahlua


    3 tbsp. kahlua


    2 tbsp. dry mustard


    Whole cloves


    Place ham with rind on rack in roasting pan, fat side up. Roast at 300 degrees, 18 minutes per pound. During last hour, trim rind, scorefat (criss cross) and stud with cloves. Sprinkle top with brown sugar, then 3 tablespoons kahlua. Pour 1/2 cup kahlua and mixed mustard into pan. Baste frequently with pan syrup. Delicious!





    ********COCO COLA BAKED HAM


    15 oz. crushed pineapple


    12 oz. diet (or classic) coke


    1/2 lb. dark brown sugar


    Whole ham (approximately 10 lb.)


    Trim off most of surface fat. Shake 1 tablespoon of flour in browning bag to prevent sticking. If you prefer, wrap in heavy duty foil. It works just as well. The bag makes it easier to clean up! Place ham in bag, place (pour) all ingredients over ham. Seal bag and make 4 to 6 one inch slits in top of bag.


    Bake at 275 degrees; 30 minutes for each pound of ham. Remove bones and other fat as soon as meat cools enough to be handled. Wrap meat in foil and place in refrigerator until cool. Slice AFTER cooling.


    NOTE: Pineapple, coke, and sugar may be increased or decreased according to taste and size of ham.Care to share your holiday ham recipe?

    take your ham and cut it so that you get diamonds along the whole top of ham ....only cut about 1/4 inch deep then place whole coles in all of the diamonds and coat the ham with brown sugar and some melted butter....baste the ham about every 15 minutes and yiou will get a nice shiny glaze on it.......and the slots will open and you have great presentation of your ham...very good question for this time of year when ham is really at rock bottom price to get you in the store for easter shopping....Any recipes for maple brown sugar glazed ham?

    Wash whatever ham it is that you have. (Pork Shoulder works best). After washing it off really good, cover it all over with brown sugar, next place it in a large roaster pan and fill the pan half way with 7up soda and pin apple juice. Cover with foil and place in the oven at 350 for 2 hours, or until tender. About 5 or 10 minutes before you remove it from the oven, take the ham out and place the pineapple on top of the ham and stick in back in the oven for the remaining time.
    I just buy a ham and pineapple slices. I put the slices directly on the ham (securing them with toothpicks so they don't fall off) and cook at 300 for a couple of hours.

    Ham and Cheese Pasta Bake


    1 (16 ounce) package rotini pasta


    1 (26 ounce) jar onion and garlic spaghetti sauce


    1 pound thickly sliced honey baked ham, cut into 1/2 inch cubes


    1 teaspoon minced garlic


    1 teaspoon black pepper


    1/2 teaspoon onion powder


    2 cups shredded mozzarella cheese


    1/4 cup grated Parmesan cheese





    1. Preheat oven to 425 degrees F (220 degrees C).


    2. In a large bowl, combine dry pasta, spaghetti sauce, ham, garlic, onion powder and pepper. Fill sauce jar with water, and pour over mixture. Mix well, and spoon into 9x13 inch casserole dish. Cover tightly with foil.


    3. Bake in preheated oven for 35 minutes. Carefully remove foil, then sprinkle with mozzarella and Parmesan cheese. Bake for 5 minutes, or until cheese is melted.





    Bean Soup





    1 (16 ounce) package dried navy beans


    7 cups water


    1 ham bone


    2 cups diced ham


    1/4 cup minced onion


    1/2 teaspoon salt


    1 pinch ground black pepper


    1 bay leaf


    1/2 cup sliced carrots


    1/2 cup sliced celery





    1. Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.


    2. Add ham bone, cubed ham, onion, salt, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim service of soup while it is cooking.


    3. Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.





    Southern Style Deviled Eggs


    6 eggs


    1 (4.5 ounce) can deviled ham spread


    1 tablespoon sweet pickle relish


    1 tablespoon mayonnaise, or as needed


    salt and pepper to taste


    1 pinch paprika


    3 pimento-stuffed green olives, sliced (optional)





    1. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and run under cold water to cool. Peel eggs, and cut into halves lengthwise.





    2. Carefully remove the yolks from the eggs, and place them into a medium bowl, scooping out a little bit of the white along with the yolk to make a more generous cup for filling. Mash the egg yolks with deviled ham, relish and enough mayonnaise to make a smooth mixture. Season with salt and pepper to taste.





    3. Spoon the mixture into the egg whites, or pipe with a piping bag for a more elegant look. Garnish filling with a sprinkle of paprika, and top some of them with a slice of green olive stuffed with pimento. Chill until serving.





    Chicken Cordon Bleu





    4 skinless, boneless chicken breast halves


    1/4 teaspoon salt


    1/8 teaspoon ground black pepper


    6 slices Swiss cheese


    4 slices cooked ham


    1/2 cup seasoned bread crumbs





    1. Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.





    2. Pound chicken breasts to 1/4 inch thickness.





    3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.





    4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.Left over spiral baked ham recipes?

    1 pan cooked cornbread (8x12 pan)


    1 16 ounce can niblet corn drained


    1 16 ounce can stewed tomatoes, chopped


    16 ounce of peas drained


    1-2 pounds of caned ham cut into cubes, or left over ham you cooked


    6 large bell peppers cored, parboiled


    6 strips of bacon


    Preheat oven to 300 degrees.


    Crumble cornbread into large mixing bowl. Add corn, tomatoes and peas. Mix until evenly moist. Add ham and mix thoroughly. Stuff mixture into bell peppers and place in large glass baking dish. Spoon excess stuffing around peppers and place one strip of bacon around top of each pepper. Bake for 40 minutes. Makes 6 servings.


    Note: I don鈥檛 parboil the peppers I bake them on 350 for 1 hour.

    Does anyone know a good baked ham recipe that doesnt use brown sugar or pineapple?

    I am hosting Turkey Day for the first time at my new house with the in-laws. The food of choice is ham and no one really likes honey ham, I am wanting a recipe that doesn't use the usual brown sugar/pineapple/sweet glaze that most recipes have. I am wanting something to impress, but that won't take a full chef's kitchen to prepare.Does anyone know a good baked ham recipe that doesnt use brown sugar or pineapple?
    Bake the ham and serve it with:


    Mustard Sauce for Ham or Corned Beef





    1 1/2 Tbs butter


    1/4 C prepared mustard


    1/2 tsp salt


    1/2 tsp pepper


    1 egg


    1/3 C brown sugar


    1/4 C sugar


    3/4 C cider vinegar





    Melt and cool butter. Beat all except vinegar and butter. Beat in vinegar. Stir mixture in cooled butter. On medium heat, boil and stir. Reduce heat. Simmer 3 minutes.





    The first two times I made this, I followed the recipe. The last time I made it I put everything together and heated it. I didn't notice a difference in taste or consistency between the two procedures.Does anyone know a good baked ham recipe that doesnt use brown sugar or pineapple?
    Put ham in roast pan lined with foil. cover ham with yellow mustard and pour a can of Coke over it. Wrap with foil tightly and bake at 375 . The length of time depends on the size of ham.
    personally, I prefer using natural apricot preserves, lemon juice and horseradish to taste, basting the ham often with this.


    The lemon cysts the usual sweetness of the preserves and the horseradish gives it some backbone.
    Smoke it.





    No need to get fancy with a recipe just smoke it and it will be juicy and tasty as well.
    Baked Ham with Mustard-Red Currant Glaze and Rhubarb Chutney


    Servings: Makes 8 servings.





    What to drink: Fruity, soft red wines 鈥?such as Merlot and some Zinfandels 鈥?work well with the mustard glaze and ham.





    Ingredients:





    3/4 cup red currant jelly


    6 tablespoons whole grain Dijon mustard


    1 1/2 teaspoons ground ginger


    1 9-pound fully cooked bone-in ham (shank or butt end)


    1 bunch watercress


    Rhubarb Chutney





    Preparation:


    Position rack in bottom third of oven and preheat to 325掳F. Whisk jelly, mustard, and ginger in heavy medium saucepan over medium heat until melted, about 1 minute.


    Remove glaze from heat.


    Trim any tough rind and fat from upper side of ham, leaving 1/4-inch-thick layer of fat.


    Using long sharp knife, score fat in 1-inch-wide diamond pattern.


    Place ham in roasting pan.


    Bake 1 hour.


    Brush top and sides of ham generously with some of glaze. Bake until thermometer inserted into thickest part of ham registers 140掳F, brushing with glaze every 15 minutes and tenting ham with foil if browning too quickly, about 1 hour 15 minutes.


    Remove ham from oven; let stand 15 minutes.


    Transfer to platter.


    Garnish with watercress.


    Serve with Rhubarb Chutney.





    Rhubarb Chutney


    Servings: Makes about 4 cups.





    Ingredients:





    1 cup plus 2 tablespoons sugar


    1/2 cup red wine vinegar


    1 1/2 cinnamon sticks


    1 1/2 tablespoons minced fresh ginger


    1 1/2 teaspoons grated orange peel


    1/2 teaspoon (scant) ground cardamom


    4 1/2 cups coarsely chopped rhubarb (from 1 3/4 pounds rhubarb)


    3/4 cup dried currants


    4 green onions, chopped





    Preparation:


    Stir first 6 ingredients in heavy large saucepan over medium heat until sugar dissolves and mixture boils.


    Add rhubarb, currants, and green onions; bring to boil. Reduce heat and simmer until rhubarb is tender but not falling apart, about 4 minutes.


    Cool to room temperature.


    Discard cinnamon.


    Cover and refrigerate chutney until cold, at least 1 hour. (Can be made up to 2 days ahead. Keep refrigerated.)


    Bring to room temperature before serving.





    Smithfield Ham Baked with Madeira


    Servings: Serves 12.





    Ingredients:


    1 15 1/2-pound fully cooked smoked Smithfield ham or Tennessee ham


    3 tablespoons butter, room temperature


    1 teaspoon ground nutmeg


    1 750-ml bottle Madeira





    Preparation:


    Preheat oven to 350掳F. Trim rind and excess fat from ham, leaving 1/4-inch-thick layer of fat. Place ham on roasting rack set in heavy large roasting pan. Spread butter over ham. Sprinkle nutmeg over ham. Pour Madeira into pan. Bake ham until well glazed and dark brown, basting every 10 minutes with pan juices, about 11/2 hours. Let ham stand at least 20 minutes.


    Thinly slice ham, beginning at shank end and proceeding at angle toward thicker part of ham. Serve ham hot or at room temperature.

    Instead of pineapple /brown sugar I use a can of coke (12 oz) it glazes the ham nicely and tastes great . If you dont like coke you can use 7-up it works just as well . good luck and god bless.
