Left over ham recipes?

i made a ham yesterday for dinner and have a lot left. does anyone know any healthy recipes to use up the ham?Left over ham recipes?

Ham Pie





1-9'; deep dish pie crust, unbaked


1 pound part skim ricotta


2 eggs


1/2 tsp. garlic powder, not garlic salt


1/4 cup Parmigiano cheese, grated


1 cup ham, diced (do not use smoked or honey ham for this)


2 tbsp. fresh parsley


1/4 tsp ground pepper


1/2 cup part skim mozzarella cheese, grated





Mix all ingredients together. Taste for salt and adjust.


Pour into pie shell. Bake at 350 for


approximately 35 minutes. Check for doneness using knife


inserted in center. If it comes out clean, it is done. If not done,


continue to bake until set. Remove from oven and allow to cool.





Ham and Cranberry Brunch Bake





2 cups egg bread (challah) or other good quality bread, crusts removed and cubed


1 cup diced cooked ham


1/2 cup dried cranberries


3 green onions, sliced


8 eggs, beaten


1 cup buttermilk baking mix (Bisquick)


1 tablespoon or to taste--Dijonnaise


2 cups milk


salt and pepper to taste


1 cup grated Muenster cheese





Preheat oven to 350 degrees. Butter a 2 quart casserole. In the casserole, combine the bread cubes, ham, cranberries and green onions. Spread out to cover bottom of casserole. In a medium bowl, whisk together the eggs, Bisquick, Dijonnaise, milk and salt and pepper. Pour over the bread/ham mixture. Sprinkle with grated cheese and bake 45-50 minutes or until set and lightly browned. Serve warm. Add a fruit salad and some sweet rolls to complete your brunch, if desired. Don't forget the Mimosas for a special, grown-up morning meal. Enjoy.Left over ham recipes?

Ham is not a very healthy meat in the first place, too much fat and cholesterol, but we all love it! Slice some of it up for sandwiches and freeze! Use some in a pot of beans, beans are very healthy for you! It also does very well in scalopped potatoes or augratin potatoes..You can chop some up and add it into any pasta or potato salad..And it is great in potato soup...Enjoy!
I don't know how healthy it is but I make ham salad.


Grind up the ham in the food processor.


Then put in some sweet pickle relish and mayonnaise so it will stick together in kind of a spreading consistency so you can put it on bread.


Not so much mayo that is is runny though.


You can add some spice like garlic powder or parsley if you like. It will keep several days, but not around my house.
Look up bean or lentil soups on Cooking Light.com or try this combo, which I love:


saute 1 cup diced onion and 1 cup diced pepper + 2 minced cloves of garlic in olive oil on med until just turning brown. Add 1 can water + 1 can veg or chicken broth (I prefer low sodium). Add 1/3 cup lentils (brown, rinsed) or split peas + 1 can diced tomatoes (drained) + 1 can Goya black bean SOUP. If you can only find canned black beans, thats fine too, just add some oregano, cumin, etc. Add the ham, diced. Simmer 30 min until lentils are cooked.
