Baked Ham and Macaroni and Cheese





1/4 lb. ham, sliced thick


1/4 lb. Mozzarella


2 oz. fontina cheese


2 oz. Provolone cheese


1 oz. Parmesan cheese (1/4 c.), grated


3 tbsp. butter or margarine


2 tbsp. flour


2 c. milk


1/2 lb. rigatoni or other pasta


Salt %26amp; pepper


1/4 c. dry bread crumbs





Dice ham. Grate Mozzarella, fontina and provolone coarsely. Grate Parmesan finely. In a saucepan, melt 2 tablespoons butter over low heat. Stir in flour and cook, stirring frequently until it bubbles. Whisk in the milk, bring to a boil, stirring constantly and continue cooking for a minute. Stir the ham and cheeses into the sauce. Heat oven to 375 degrees. Cook the macaroni in boiling salted water until almost done. Drain and mix with the sauce. Season to taste with salt and pepper. Butter a 1-1/2 quart baking dish and pour in the macaroni mixture. Cover loosely with foil and bake until bubbling, about 25 minutes. Remove foil. Heat the broiler. Melt the remaining 1 tablespoon butter and toss in bread crumbs. Scatter the crumbs over the macaroni. Brown the dish in broiler for about 5 minutes and serve.Recipes to use left over ham?

besides all the other ideas already:


-chop up and add some mayo and bit of relish for sanwiches


-small pieces and small piece of cheese and wrap in pillsbury cresent rolls...cook as directed


- slices and add some pineapple chunks...heat together


- reheated pieces go good with scalloped potatoes on the side


-dice up some and freeze...use for a pizza in the future


-ham and cheese biscuits/muffins
1 slice of Ham


1 slice of Kraft yellow cheese


2 spoons of mayonnaise


2 loafs of bread

Chop up the ham into small pieces.Then use in any of these.Casserole,ham,frozen hash browns,cream of mushroom soup.Mix all then pour into dish top with cheeses and bake at 350 for 30 mins.Add to beans and cook til tender.Mix with scrambled eggs and make a burrito.Make a ham salad and eat with crackers..hope this helps.
You could thinly slice the ham and make ham and grilled chese sandwich. Make an omlet, chopped ham in fried potatos, there are all kinds of egg dishes you could put ham in. If you have a ton of ham and want to use up the whole thing, you could make split pea and ham soup:





1 cup chopped onion


1 teaspoon vegetable oil


1 pound dried split peas


1 pound ham bone


salt and pepper to taste





DIRECTIONS


In a medium pot, saute onions in oil or bacon grease. Remove from heat and add split peas, ham bone or chopped ham. Add enough water to cover ingredients, and season with salt and pepper.


Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.


Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve
We like this. You can make ahead of time and refrigerate or bake right away.





BAKED DENVER SANDWICH





8 slices buttered bread


1/4 c. shredded Cheddar cheese


1 c. ground ham


1/4 c. chopped green pepper


1 tbsp. chopped green onion


3 eggs, lightly beaten


2 c. milk


1/2 tsp. salt


Dash of cayenne pepper





Trim crust from bread. Arrange 4 slices buttered side down in 9 inch


baking dish. Sprinkle with cheese, ham, green pepper, and onion.


Place remaining slices, buttered side up, on top of filling. Beat


eggs with milk, salt, and cayenne pepper. Pour over sandwiches in


pan. Press down each sandwich to blend egg mixture into bread. Bake


at 375 degrees for 35 to 45 minutes until sandwiches feel firm to the


touch and egg mixture is set. Garnish and serve.








************You may cover and refrigerate for up to 8 hours before


baking. I like to saute the ham (I slice it instead of grinding it),


green (or red) peppers, and onion before sprinkling it onto the


bread. Adds another step and about 5-10 prep time, but it's worth


it :-)********************
Dice it up and put in your mac and cheese, or scrambled eggs. Slice thin and put on your grilled cheese. Make some pasta, toss in the diced up ham and add a jar of al fredo sauce.
You could make a Cuban sandwich-





5 or more hoagie rolls if you can find them or something similar, slice them until there is only a little piece of bread keeping it together, add mustard if you like and as much or as little as you want, add some provolone and the top it with ham, then slice some mozzarella and put it on top of the ham and add a few more slices of ham, close the sandwich and you can grill or bake it. But my favorite is split pea soup, chop the ham into cubes, then add into a crock bot or pot of water the split peas. Roughly chop some carrots potatoes and onions, add the ham a little while after the other items are added and you also have to mash the ingredients before you add the ham and make sure it is smooth and creamy but somewhat chunky. Or you could even make an omelette or two for breakfast
This is a simple comfort food from my childhood.





Slice potatoes thinly, I generally use a mandolin, but you can do it with a food processor slicer or a knife. Then layer them in a greased baking dish with the ham, cheese (I like a mixture of swiss and cheddar). Make sure that you season the potatoes with salt and pepper on each layer. It should be like a lasagna. When you are done layering pour some half and half on top. It should almost be to the top of the potatoes, but not quite. Then cover with foil paper and cook on a 350 oven for about 1 hour. Then take off the foil paper and top with a even mixture of bread crumbs and parm cheese. It's rustic, but so good. The key is to make sure that you season each layer of potato with salt and pepper or else it will be bland.
My favorite part about having ham is the leftovers I can use to make things.

Grandma's Ham Casserole





* 1 1/2 cups cubed ham


* 5 potatoes, thinly sliced


* 2 carrots, sliced thin


* 1 (8 ounce) can mushrooms, drained


* 1 (10.75 ounce) can condensed cream of mushroom soup


* 1 (10.75 ounce) can water





DIRECTIONS





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a 9x13 inch baking dish, combine the ham, potatoes, carrots and mushrooms.


3. In a medium bowl, combine the soup with the water. Mix well and pour over the mixture in the baking dish, stirring to coat.


4. Bake at 350 degrees F (175 degrees C) for 1 to 1 1/2 hours, or until carrots are tender.
Ham Salad- you'll need a meat grinder for this.





Run the han through the grinder. Add sweet pickle relish, or run some sweet pickles through the grinder. Chop hard boiled eggs fine, mix them with the ham and pickles- the proportions are up to you, but keep it mostly ham. Season with pepper, the ham is probably salty enough already, mix with mayonnaise until you've got a spread. Makes a nice sandwich filling.
I grew up with my mom making a casserole of left over ham cut up into small bite size pieces, and incorporating that into her recipe for scalloped potatos. She also added cheddar cheese on top and it was to die for.
