Hearty Lentil Soup with Ham





1 smoked ham hock


1 pound brown or green lentils, picked over and rinsed


3 cups sliced mushrooms


1 large onion, chopped


1 garlic clove, minced


3 carrots, chopped


3 ribs of celery, chopped


1 teaspoon dried thyme


1 bay leaf4 cups chicken broth


8 cups water


Salt and pepper


3 tablespoons chopped fresh parsley





In a large pot combine all of the ingredients and bring soup to a boil over moderately high heat. Reduce heat and simmer soup, partially covered, for 1 hour. Remove ham hock from soup, remove meat from bone and shred or dice ham. Stir ham into soup and continue to simmer for another 20 minutes. Taste soup and adjust seasoning with salt and pepper. I thought of making a ham and pine apple pizza. I froze my ham into ziploc plastic storage bags till I figure out what I will make with it (soup, sandwiches, pizza etc) and it is in the freezer compartment of my fridge.
I'm in the same boat. I'm trying to find creative, non-boring recipes for the leftover ham. If nothing else, cube it up and freeze it for sometime in the future.





As far as the ham bone, toss it in split pea soup, bean soup, or toss it in the freezer and save it for NYDay to make Hoppin' John!

I am country as a ham so I can tell ya what I do...





I make me a pot of pinto beans and as they cook I put ham...bone and all...into the pot...the result is Primo Mucho!

you could do a lot of stuff with ham. chowders, carbonara, filet mignon, fried rice yang chow style and with ham bone. you can broil it to make good sauces and glaze..
honey. you got LEFTOVER ham? didn't know such a thing could happen! buy dried split peas and put them on to cook with the ham bone or most any dried bean or pea. you can also chop a little ham and stir it in at the end, before serving. chop up an onion and carrot to cook along with the ham bone. stir cubed ham into hot rice along with frozen mixed vegetables for a ';pilaff';. slice it and freeze it in little zipper bags, individual portion size, for sandwiches and ';huevos rancheros'; (ham and eggs with taco sauce). stir it into hot cooked macaroni and cheese for a casserole... remember to not buy another one for New Years!!

The parsley sauce - Make a rue on the hob with melted butter and plain four... then slowly add milk whilst whisking away the lumps... should end up with a double cream consistency... add a bid handful of chopped parsley.





Heat up the Ham and pour the sauce over... Yum

Irish Potato Soup with Bacon and Vegetables


900g (2lb) Potatoes, peeled and diced


900ml (1陆 pint) Chicken or Vegetable Stock


300ml (陆 pint) Cream or Cream and Milk


85g (3oz) Smoked Bacon


2 Medium Carrots, diced


6 tsp Butter


1 Leek, cut lengthways, sliced


1 Onion, diced


1 Spring Onion, cut into strips


录 Head Celeriac, diced


Pinch Ground Nutmeg


Salt and Pepper to taste


Croutons





Heat 4 tablespoons of butter in a heavy saucepan


Saute the potatoes, celeriac and carrots.


Cover with the stock, bring to boil and simmer for 40 minutes.


Puree half the soup by passing it through a sieve or liquidising in a food processor and return to the saucepan.


Combine with the puree and the rest of the soup.


Heat the remainder of the butter in a frying pan.


Saute the leek and onion lightly and add to soup.


Add the cream, season with nutmeg, salt and pepper and cook for five more minutes.


Dice the bacon and fry until golden and crispy.


Serve the soup with croutons, diced bacon and spring onion sprinkled on top.

biol bone for about 3hours. Then in another pan sweat onion, celery and carroits. Put in pot in stock you got from bone add some extra ham and about 12oz of what ever kind of dry bean you like. Cook till beans are tender. sever with corn bread
Yes ham is good for soups. You could make home made split pea soup. Buy some dried split peas and follow the directions on the package.


Also I like to fry it up a tiny bit and add it to scrambled eggs.

Pork Fried Rice using a packaged rice mix





Ham Pie- one-dish meal is made with leftover ham, sour cream, cream of mushroom soup, and topped with biscuit dough.





Macaroni and Cheese recipe that is perfect with leftover chopped ham:


1 package elbow macaroni


2 cans cream of chicken soup


1/3 cup chopped onion


3 tablespoons pimento


3 tablespoons margarine


4 hard boiled eggs, diced


2 cups edam or cheddar cheece diced or grated ( I used cheddar, grated)


1-2 cups chopped cubed ham


PREPARATION:


Cook macaroni as directed on package, omitting salt. Drain. Combine soup, onion, pimento, eggs and cheese with macaroni in 2 quart casserole dish. Stir in ham. Crumble bread crumbs in butter to garnish top.


Bake 25-30 minutes in 350 oven.
RIGATONI AND HAM BAKE


3 c. rigatoni


2 c. diced cooked ham


1 c. shredded Cheddar cheese


1 jar 4 cheese alfredo sauce


1/2 cup milk


1/2 c. crushed ritz crackers


butter





Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.











HAM PIE


4 tbsp. onion, diced


4 tbsp. green pepper, diced


4 tbsp. butter


6 tbsp. flour


1 can cream of chicken soup


1 1/3 c. milk


1 tbsp. lemon juice


2 c. ham, diced





Saute onion and pepper in butter until golden. Stir in flour and when bubbly. Add milk and soup. Stir until smooth. Add lemon juice and ham. Put in deep greased casserole.


--TOPPING:--


1 1/2 c. prepared biscuit mix


6 tbsp. milk


1/2 c. grated Cheddar cheese


Mix together. Roll or pat onto a floured board. Cut with round cutter and lay on top of ham mixture. Bake in 450 degrees for 25 minutes or until top is nicely browned.








As for the ham bone, it is great for putting into a pot of pinto or navy bean soup, provides great flavor. Simply sort the beans for rocks, discolored and broken beans, place beans in pot, cover with water and bring to a boil. Drain beans, place back in pot and cover with fresh water. Add ham bone. Bring to a simmer and simmer 2-3 hours until beans are tender and broth is flavorful. May add salt and pepper to taste.

~Pasta with sauteed ham cubes, onions, peppers; dress with olive oil, and lots of parmesan


~Hot sandwiches: Mix equal amounts of cubed ham and cubed or grated cheese, a minced hardboiled egg, diced onion, some mayo to bind and about twice as much catsup as mayo. Spread on hamburger buns, put the top on, cover in foil, and bake in 350 oven about 20 minutes until melty. Delicious!


~Scalloped potatoes with ham.


~Use some in omelettes.


~Great in fried rice with carrots, green onions, broccoli, scrambled eggs, and soy sauce.





If you absolutely can't face another ham meal for a while, put it in the freezer for a while--it'll taste great when you haven't had it for a month or so.
With left over ham after Christmas, we just have salads for the next week for dinner and also ham sandwiches.

INGREDIENTS


8 cups chicken or ham stock


4 cups cubed Country ham


4 tablespoons dried rosemary


2 pounds bacon, diced


2 large onions, diced


3 leeks, diced


3 cloves garlic, minced


6 green onions, diced


6 large potatoes, cubed


1 pound carrots, cubed


1 1/2 cups heavy cream


DIRECTIONS


Pour stock into a large pot set over medium heat, and bring to a simmer. Stir in the cubed ham and 2 tablespoons rosemary.


In a large skillet over medium heat, cook diced bacon until crisp. With a slotted spoon, remove bacon, and add to pot. Drain half of the bacon grease, and return skillet to medium heat. Stir in onions, leeks, garlic, and green onions; cook until tender, then add to pot.


Place cubed potatoes, carrots, and 2 tablespoons rosemary in pot; simmer until vegetables are tender, about 20 minutes. Turn off heat, and add cream to pot.








baked omelet


INGREDIENTS


8 eggs


1 cup milk


1/2 teaspoon seasoning salt


3 ounces cooked ham, diced


1/2 cup shredded Cheddar cheese


1/2 cup shredded mozzarella cheese


1 tablespoon dried minced onion


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.


Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, Mozzarella cheese and minced onion. Pour into prepared casserole dish.


Bake uncovered at 350 degrees F (175 degrees C) for 40 to 45 minutes.








hearty ham casserole


INGREDIENTS


2 cups potatoes, cubed


2 cups cooked ham, cubed


1 (15.25 ounce) can whole kernel corn, drained


1/4 cup finely minced fresh parsley


1/4 cup butter


1 tablespoon chopped onions


1/3 cup all-purpose flour


1 3/4 cups milk


1/8 teaspoon ground black pepper


4 ounces processed cheese food, shredded


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.


Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.


Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

The ham bone, if boiled, with some bay leaves and an onion will make a really nice soup stock! You could then make a pea and ham soup! I have divided the left overs up into seperate meals. I will make a ham and mushroom pasta, and I have also cut some slices and left in the fridge for people to pick on. The rest I have frozen and will use some for breakfast with egg, I will more than likely make a casserole too ... putting some ham into a dish, throwing some sort of sauce over and cook in the oven until heated through, serving with potato's and veg!! I am already tired of the sight of ham, so I reckon the freezer will be full for awhile to come. Definately making the soup though!!
