The most traditional way to prepare a whole ham is to bake it.





* For a ham that has only been partially cooked, you will need to allow about 20 minutes per pound in a moderate (350 degrees F/175 degrees C) oven.


* A fully cooked ham will require about 10 minutes per pound in order to be heated all the way through.





Although ham is perfectly delicious all by itself, you can make it extra-special by using a glaze. The most popular glaze recipes contain combinations of fruit juice, wine or whiskey, honey, mustard, brown sugar, fruit preserves and spices. Brush some of the glaze over the surface of the ham before placing it in the oven.





To help keep your ham moist and juicy:





* Place the ham cut-side down in a baking pan. If it's going to be in the oven for more than an hour, you also may want to place a foil ';tent'; over your ham in order to keep it from drying out.


* Continue to brush the ham with glaze and baste it with the pan juices every 20 minutes or so, until it is heated through.


* To finish the ham and give it a deliciously caramelized coating, remove the foil tent, brush it with glaze and pan juices one more time, then turn your oven to the broiler setting. Allow the outside of the ham to get nice and browned-this should only take about 5 minutes, but watch it closely so it doesn't get too dark.


* When the internal temperature reaches 160 degrees F (80 degrees C), the ham is ready for serving.

INGREDIENTS (Nutrition)





* 1 (20 ounce) package 15 bean mixture, soaked overnight


* 1 ham bone


* 2 1/2 cups cubed ham


* 1 large onion, chopped


* 3 stalks celery, chopped


* 5 large carrots, chopped


* 1 (14.5 ounce) can diced tomatoes, with liquid


* 1 (12 fluid ounce) can low-sodium vegetable juice


* 3 cups vegetable broth


* 2 tablespoons Worcestershire sauce


* 2 tablespoons Dijon mustard


* 1 tablespoon chili powder


* 3 bay leaves


* 1 teaspoon ground black pepper


* 1 tablespoon dried parsley


* 3 tablespoons lemon juice


* 7 cups low fat, low sodium chicken broth


* 1 teaspoon kosher salt

1. Place the soaked beans into a large pot and fill with enough water to cover by about 1 inch. Bring to a boil, then simmer over low for 30 minutes. Drain. Add the ham bone, ham, onion, celery, carrots, tomatoes, vegetable juice, and vegetable broth. Season with Worcestershire sauce, Dijon mustard, chili powder, bay leaves, pepper, parsley and lemon juice. Pour in enough of the chicken broth to cover the ingredients.


2. Simmer over low heat, stirring occasionally, for about 8 hours. Add more chicken broth as needed throughout the day. Remove the ham bone and season with salt if needed. Continue to simmer for a couple more hours. Remove bay leaves before serving.

Potato based quiche.





Peel, cut and boil potatoes until soft, drain, rinse with hot water, mash with a bit of butter/margarine, milk and salt to taste until smooth. Put aside.





mix 4 eggs, ham tomato, mushrooms, cheese (anything else you would like in there too) a quarter of a cup of milk and mix well together.





Put mashed potato in a greased quiche plate, smooth up sides and over bottom, add egg mixture and put in oven to cook on about 180 degrees Celsius until egg is firm.





Another good ham recipe is to cook some rice in chicken stock until tender, scramble up some eggs, add to drained chicken rice mix, add ham and some veggies like peas, corn carrots which are cooked. Mix all together and eat, it is a fantastic quick meal.

I'm going to a buffet. I wanted all the yummy leftovers, but the mess over ruled the leftovers so now I'm going out for lunch instead!
