COPYCAT HONEY BAKED HAM





1 (7 lb.) med. smoked pork picnic shoulder (bone in or out)


2 c. sugar


1 c. honey or brown sugar, packed


1 (6 oz.) can frozen orange juice concentrate, thawed


1 tsp. whole cloves





Make crosswise slits, 1/2 inch apart, halfway through ham to where knife touches bone. Place ham in deep bowl and barely cover with water. Stir in sugar. Soak at least 2 days in refrigerator. Drain.


Place ham in roasting pan, lined with enough foil to wrap completely. Pour honey or brown sugar and orange juice all over pork. Stick cloves all over meat. Wrap tightly with foil. Bake at 200 degrees for 6 to 7 hours or until done, unwrapping and basting occasionally with honey mixture. Unwrap and bake at 450 degrees about 15 minutes for slightly crisp skin.

Potato Salad- It's really creamy and flavorful





Ingredients:





3 lb. red potatoes, unpeeled


1/3 cup plain yogurt


1/4 cup mayonnaise


1/4 cup sour cream


1 Tbs. Dijon mustard


3 Tbs. fresh lemon juice


8 green onions, white and light green portions,


thinly sliced


2 celery stalks, finely chopped


3 Tbs. chopped fresh flat-leaf parsley, plus


parsley sprigs for garnish


3 Tbs. chopped fresh mint, plus mint sprigs


for garnish


3 Tbs. chopped fresh basil, plus basil sprigs


for garnish


Salt and freshly ground pepper, to taste





Directions:





Bring a large pot three-fourths full of salted water to a boil over high heat. Add the potatoes and boil until tender when pierced with a fork, 15 to 20 minutes. Drain and let cool completely in the refrigerator for at least 1 hour. Cut the potatoes into 3/4-inch dice.





In a large bowl, stir together the yogurt, mayonnaise, sour cream, mustard, lemon juice, green onions, celery, and the chopped parsley, mint and basil. Add the potatoes. Season with salt and pepper and toss gently to mix.





To serve, transfer the salad to a large serving bowl and garnish with parsley, mint and basil sprigs. Serves 6.





Deviled Eggs- no sugar in these, so even better








Ingredients





12 eggs


4 tablespoons mayonnaise


2 teaspoons yellow mustard


2 teaspoons sweet relish


Salt


Pepper


Paprika, for dusting





Directions





Place eggs in a large wide saucepan and cover with cold water. Bring to a boil for 12 minutes. Remove eggs and and cool in refrigerator. Remove shells from eggs and slice in half lengthwise. Separate egg yolks and place into a bowl. Place whites on a separate plate. Add mayo, mustard, relish and salt and pepper, to taste, to yolks and mash together with a fork until creamy and smooth. Using a large star tip and resealable plastic bag, pipe the yolk mixture back into each egg, enough to fill yolk holes completely. Dust tops with paprika. Refrigerate. Serve cold.








Baked Ham- This is my favorite, I make it every Easter and it's always a hit!





Ingredients:





1/2 fully cooked bone-in or boneless butt end


ham, about 6 lb.





For the glaze:





3/4 cup orange marmalade


1 Tbs. Dijon mustard


1 Tbs. soy sauce


1/2 tsp. coarsely ground pepper


Directions:





Let the ham stand at room temperature for about 1 hour before baking. Preheat an oven to 325掳F.





Unwrap the ham and wipe the surface with a damp paper towel. Trim off any extra-thick layers of fat. Score the outside surface of the ham in a diamond pattern, making crosscuts


1/2 inch apart.





Place the ham, rounded side up, in a large roasting pan. Bake for 30 minutes.





Meanwhile, make the glaze: In a small bowl, stir together the orange marmalade, mustard, soy sauce and pepper.





After 3 minutes remove the ham from the oven and brush half of the glaze over the surface of the ham. Return to the oven and bake, basting every 20 minutes with the remaining glaze until it is used up. The ham will take 12 to 15 minutes per pound and is done when an instant-read thermometer inserted into the thickest part registers 140掳F, about 1 hour more.





Remove from the oven and transfer the ham to a warmed platter. Cover loosely with aluminum foil and let stand for 20 minutes before carving. Slice and arrange on the platter. Serves 8.
There are as many deviled egg recipes as there are cooks. I use mayo, mustard, Tapitia (a mexican hot sauce with no vinegar) %26amp; sweet pickle relish. As for the ham I love it with pineapple slices %26amp; brown sugar. I also make a bourbon- brown sugar glaze. Simply mix brown sugar %26amp; about 1/4 cup bourbon whiskey till you have a thick sauce %26amp; coat the ham with it.
We've been enjoying our glazed baked ham recipe for years and years. It is a family tradition to have baked ham at Easter and on New Year's Day we would really miss it if we did not have it. Try frozen apple juice concentrate on you ham. I just put it on top and baste a few times to make a glaze.
